Processing

Only ripe cherries are harvested and floated for a second selection and left in open tanks for 24 hours. The cherries are depulped and fermented again for 50 hours in closed tanks and later washed, dried in sun-bed driers for 2 to 3 weeks and sometimes, depending on the weather, finish the drying in mechanical dryers.

This Geisha is the most floral and clean coffee I’ve had from the Diwan crew. This is our first geisha to be released on our website, a huge step for delicate that I am more than proud to have done with Yessica and Diego who are the first producers we had the privilege of working with. This coffee has structured acidity that comes in mostly orange and green citrus fruits. This coffee is very high on the sweetness chart, having lots of raw honey and pilloncillo sugar. It has a really nice lemongrass note that complements the florals. The florals range from wildflower honey to white/yellow flowers. Over days of tasting we have experienced notes of kumquat, lemongrass, honeysuckle, pilloncillo, limeade, peach preserves, and mango nectar.
