Cherries are handpicked at peak ripeness and sorted for quality and density. Cherries are fermented in sealed tanks void of oxygen for 36 hours and then mechanically depulped. Cherries are then fermented in their mucilage in sealed tanks for another 36 hours. Finally the cherries are washed to remove their mucilage and our sun dried for 5 days before being finished with mechanical drying at 35 celsius. 

I decided to work with procaal after meeting their crew at WOC. They gave me 6 samples which included this Typica and 5 Geshas. When I cupped them this coffee ended up being my favorite because of its standalone tropical profile. This coffee has a super unique flavor combination of clean tropicals and soft green umami qualities. The body is light for a washed Colombia and the acidity + sweetness are balanced. Over days of tasting we experienced notes of mango, jackfruit, nori, green grape, lemongrass, and kumquat. 

 

About the Producer + Farm 

Pablo Andrés Guerrero, an architect born in Pasto, comes from a family that does not produce coffee. He began his agricultural activity in 1988 with cereal and fruit crops. But it was not until 2012 when he started with the cultivation of coffee. Hacienda El Obraje is located in the municipality of Tangua, in the southern region of the department of Nariño, at an average altitude of 2200 meters above sea level. Fifty-five percent of the farm's area is set aside as an environmental reserve, where there is a wide variety of flora and fauna native to the region. Approximately 39 hectares are cultivated on the farm, where different varieties are distributed such as: caturra, castillo, maracaturra, geisha, typica, yellow bourbon, pink bourbon, moka, SL28. One of the most outstanding achievements for El Obraje was placing first in the Cup of Excellence Colombia, 2021.
