Coffee cherries are picked and depulped the same day, fermented for 8-12 hours in open tanks, washed to remove mucilage, then spread on raised beds to dry for 5-15 days.
Taste
This is the next coffee in delicates participation in Ethiopia season. This coffee is a really unique representation of a washed Ethiopian. This coffee has lots of definition in its fruit qualities, leaning into a variety of stonefruit and clean fresh grapes. The coffee has great sweet and rustic florals that are present from start to finish. Over days of tasting we have experienced notes of plumcot, muscat grape, wIldflower honey, limeade, white florals.

Halo Beriti Washing Station was established in 2014 and serves 750 smallholder producers, who deliver their coffee in cherry form. Special Prep coffees (often called premium in Ethiopia by producers) happen when coffee cherries are collected by a limited number of small-holder farmers. The sorting contains a high percent of perfectly ripe cherries, limiting ones that are under/overripe. They are usually high performing day lots that get separated from other lots. A very small amount of these bags are produced every year.
