Processing
Cherries are sorted for defects, pulped and with 10% of their mucilage remaining are fermented for 24 hours. Next is handwashed and dried on shaded beds for 9-12 days. During this process the coffee is turned every few hours to ensure even drying.
Taste
This coffee is delicates entrance to Ethiopia season and we are starting with all gas, no breaks. This coffee shows up in cup with soft citrus notes which lead into its clean and strong jasmine florals. The florals are nicely complemented by a perfumey white peach that goes long into the finish with the florals. This is an elegant washed coffee that I look forward to drinking every morning. Over days of tasting we have experienced notes of yuzu, white peach, jasmine, and white tea.
Region
This lot contains 100% cherry from the Danche community which sits between 2000-2300 MASL, a locality in the chelbesa kebele (which is having a stellar year). It was processed by Habtamu Fikadu of of Kuri Mountain Coffee. Kuri Mountain Coffee was established in 2015 by a family whose coffee roots go back to 1945. The company works through its own farm, washing stations, hulling sites, and registered outgrower farmers across several Ethiopian coffee producing regions. Its operations are built around traceability, quality control, and direct export.
