Processing
Coffee cherries depulped and undergo a 48-72 hour fermentation depending on the temperature. After washing the parchment is rests in water for for another 12 hours before being dried on raised beds for 10-12 days.
This is delicates second danche selection! This lot has a 48-72 fermentation step that really turns up the fruitiness that danche village has to offer. This coffee was also processed at Chelbesa main station by Habtamu Fikadu. We are coffee nerds at heart so comparing what processing can change between these two danche lots was the motivator for this second selection. Expect more vibrant fruity notes and some added texture with this lot. This coffee is still very floral and had tons of bergamot oil that lingers through the finish. Over days of tasting we have experienced notes of peach rings, bergamot, watermelon, raw sugar, tangerine, dried apricot, yellow + white florals.
