The cherries are then depulped and transferred to plastic tanks, where a controlled fermentation begins. Fermentation is monitored through Brix measurements, starting at 22°Bx and concluding at 8°Bx over approximately 72 hours. The coffee is then dried on raised sun beds for 15-20 days for a slow even dry.\u003c\/p\u003e\n\u003cp\u003eThis Pink Bourbon is a bright beautiful coffee. Over days of tasting we have tasting notes of cranberry, pomegranate, jamaica florals, pink limeade, and lemongrass.\u003c\/p\u003e\n\u003cp\u003eSometimes in life I like to believe everything happens for a reason. After reaching out to unblended for samples and cupping through them I chose to contract this Pink Bourbon as our first coffee for our menu. After that I decided to attend WOC San Diego to immerse myself in the coffee community fully.\u003c\/p\u003e\n\u003cp\u003eWhile there at the unblended both I got meet both Yessica and Diego. It was as human of an experience as you could get, and it made my heart feel full. Diego and Yessica, thank you for giving me the opportunity to share your coffee with the world. Their great-grandfather began cultivating coffee as a livelihood, and their grandfather and parents continued building the tradition.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eAlthough their family was long involved in coffee, it wasn’t until Yessica explored specialty coffee through studies and teaching at SENA that she realized its full potential. She soon introduced her brother Diego to this world, and together they founded Diwan Coffee.\u003c\/p\u003e\n\u003cp\u003eThis initially started as a hobby while working in other coffee companies, but over time their passion grew into a business, leading them to leave their jobs, acquire their own farm, and develop unique processes. Diego specializes in fermentation and varietal profiling, while Yessica mastered cupping, logistics, and sourcing. Today, Diwan Coffee brings together their own production with allied farmers. Fugi was built in 2013, but it was purchased by Emmanuel Rusatira (Sundog Trading\/Baho) in 2016. Since then, he’s dedicated this station to solely producing specialty grade coffee. \u003c\/p\u003e\n\u003cp\u003eFugi was one of Emmanuel's first two washing stations, and it played an integral role as the foundation upon which he launched Baho Coffee operations back in 2016. It’s the third smallest station in the Baho collection, purchasing cherry from around 950 smallholder farmers and producing 900 60kg bags of exportable specialty grade coffee each year. We decided to bring on two different lots from the Kii Station to see how screen grading affects the end cup profile. This is the Peaberry separation lot which contains small round coffee beans. This is a natural mutation that happens in coffee growing where the coffee cherry contains a single round bean instead of two. This coffee is a bright coffee as expected from Kenya. Of these, approximately 2,200 actively deliver cherry to Kathima, making it a significant and reliable supply point within the cooperative. From a sourcing perspective, Kathima benefits from a strong combination of environmental and structural advantages. Farms are situated between 1,600-1800 MASL, where a tropical rainforest  climate and nutrient-rich red volcanic soils provide ideal conditions for coffee cultivation.
